ramequin assez haut ou un verre à tapas).<o:p></o:p></p><p class="MsoNoSpacing">Déposer la base au
fond des cercles et tasser à l’aide d’une cuillère.<o:p></o:p></p><p class="MsoNoSpacing">

égoutter et rincer les noix de cajou. Les mettre dans un blender avec la crème
de coco, le jus de citron, les zestes de citron, l’huile de coco et le sirop
d’agave. Mixer jusqu’à obtenir une consistance crémeuse.</span></p><p class="MsoNoSpacing"><o:p></o:p></p><p class="MsoNoSpacing">Porter à ébullition
5 c. à soupe d’eau et 1/2 c. à café d’agar-agar dans une petite casserole en
remuant constamment (1 min maximum) puis verser l’agar-agar dans la crème du
cheesecake et remixer une fois.<o:p></o:p></p><p class="MsoNoSpacing">Le mélange sera
très liquide mais pas d’inquiétude ça va gélifier dès que ça va refroidir.<o:p></o:p></p><p class="MsoNoSpacing">Verser
immédiatement dans les cercles (ou verre) sur la base.<o:p></o:p></p><p class="MsoNoSpacing">Mettre au frigo et

<p class="MsoNormal">Tout d’abord j’espère que la réhydratation se passera bien
car c’est un test. Mettre le kéfir dans une conserve en verre avec à peu
près la même quantité de sucre. <o:p></o:p></p>
<p class="MsoNormal">Il est important que les grains ne touchent pas acier ou
inox, utiliser du plastique ou du verre.<o:p></o:p></p>
<p class="MsoNormal">Je pense qu’il faut le laisser 2 ou 3 jours à l’abri de la
lumière, le mien est dans un placard et plutôt au chaud (pas à la cave). <o:p></o:p></p>
<p class="MsoNormal">Préparation du kéfir à ma façon<o:p></o:p></p>
<p class="MsoNormal">1,5 l d’eau du robinet <o:p></o:p></p>
<p class="MsoNormal">30 gr de sucre<o:p></o:p></p>
<p class="MsoNormal">30 gr de grains égouttés + ou – (je ne suis pas au gramme
prêt)<o:p></o:p></p>
<p class="MsoNormal">½ citron en rondelles bio de préférence<o:p></o:p></p>
<p class="MsoNormal">1 figue séchée (ou autre fruit séché)<o:p></o:p></p>
<p class="MsoNormal">Recouvrir le bocal avec une feuille de sopalin ou gaze, il
faut laisser passer l’air. <o:p></o:p></p>
<p class="MsoNormal">Je le laisse sur le plan de travail 1 jour ou 2, j’attends
au moins que la figue soit remontée à la surface. <o:p></o:p></p>
<p class="MsoNormal">Après je transvase dans 2 bouteilles de 75 cl type limonade,
je ferme et là je les laisse encore 24 hs à température ambiante si on veut du
pétillant (sinon on peut le boire directement) à ce moment-là on peut mettre
des feuilles de menthe ou autre parfum. <o:p></o:p></p>
<p class="MsoNormal">Faire ce que tu veux de la figue, mange les rondelles de citron
et mets les gains avec les autres. <o:p></o:p></p>
<p class="MsoNormal">Direction frigo. <o:p></o:p></p>
<p class="MsoNormal">On en boit 1 verre tous mes matins. <o:p></o:p></p>
<p class="MsoNormal">Ca à l’air long mais c’est une habitude à prendre, mais
quand on y a goûté on lui dit merci de faire du bien à nos intestins .</p><p class="MsoNormal">Les grains ont besoin d’être nourris donc de temps en temps
leur donner du sucre.</p><p class="MsoNormal"><o:p></o:p></p>
<p class="MsoNormal">Tiens moi au courant, déjà savoir si ils se sont bien

<p class="MsoNormal">Pour savoir s’ils vont bien ils doivent faire des bulles

<span style="font-size: x-small;">C’est la raison pour laquelle nos ancêtres l’utilisaient : la fermentation, et en particulier la lacto-fermentation permet de conserver les aliments plus longtemps, sans risque pour la santé. Quand il n’y avait pas de congélateur, ni de pasteurisation, c’était un moyen simple de disposer de conserves de longue durée. Et l’avantage par rapport aux conserves modernes c’est qu’il n’y a pas de pertes de micronutriments, ni de produit toxique dans le contenant. C’est tout bénef’ !</span></div>

<span style="font-size: x-small;">Les aliments fermentés améliorent la biodisponibilité des minéraux par l’organisme. L’acidification des aliments rendrait en effet leurs minéraux plus solubles. C’est le cas du fer par exemple : l’acide lactique augmente le nombre de molécules de fer solubles (1). Les scientifiques ont trouvé aussi des taux de vitamine C et de vitamines B6 et B12 plus hauts dans les légumes lacto-fermentés par rapport à leurs homologues nature (2).</span></div>

Comparés aux probiotiques vendus en suppléments, ceux des aliments lacto-fermentés présentent des avantages certains : ils sont plus variés, surtout si on mange différents types de légumes lacto-fermentés, ils sont servis avec des fibres, donc des prébiotiques, la nourriture des bonnes bactéries intestinales. Et en plus ils sont bien moins coûteux. Le seul inconvénient : on ne connaît pas la quantité de probiotiques ingérés à l’avance. Pour y pallier le mieux est d’en manger régulièrement, jusqu’à une fois par jour.</span></div>

Parmi les bons choix : chou, carotte, betterave, concombre, aubergine, ail, haricots verts, tomates vertes, cornichons, oignons…<br style="box-sizing: border-box;" />Pas besoin d’acheter du matériel particulier pour se lancer dans la lacto-fermentation. Elle ne nécessite que des ingrédients que l’on a déjà en cuisine. Voici la recette.</span></div>

<li style="box-sizing: border-box; margin: 0px 0px 0.625rem; padding: 0px;"><span style="font-size: x-small;">Lavez, épluchez et découpez (si nécessaire, et plus ou moins finement) les légumes.</span></li>
<li style="box-sizing: border-box; margin: 0px 0px 0.625rem; padding: 0px;"><span style="font-size: x-small;">Diluez une cuillère à soupe de sel dans chaque litre d'eau de source que vous allez utiliser.</span></li>
<li style="box-sizing: border-box; margin: 0px 0px 0.625rem; padding: 0px;"><span style="font-size: x-small;">Remplissez les bocaux avec les légumes (seuls ou mélangés), ajoutez éventuellement les aromates de votre choix (graines de moutarde, de cumin, de carvi, de fenouil, de coriandre, baies de genièvre, de poivre, clous de girofle, herbes aromatiques, feuilles de laurier, ail...), tassez, couvrez d'eau froide salée et refermez les bocaux.</span></li>
<li style="box-sizing: border-box; margin: 0px 0px 0.625rem; padding: 0px;"><span style="font-size: x-small;">Placez d'abord les bocaux à 20-22°C pendant 2 ou 3 jours afin de favoriser le début de fermentation, puis mettez-les dans un lieu plus frais (15-18°C) et patientez un petit mois avant de déguster.</span></li>
<li style="box-sizing: border-box; margin: 0px 0px 0.625rem; padding: 0px;"><span style="font-size: x-small;">Une fois entamé, le bocal doit être conservé au réfrigérateur et consommé dans les 15 jours.</span></li>

<span style="font-size: x-small;">À un niveau un peu plus avancé, on peut utiliser des grains de kéfir ou du kombucha (à acquérir ou se faire donner au préalable donc).<br style="box-sizing: border-box;" />Notez que la lacto-fermentation peut se faire sans sel, mais dans ce cas la conservation sera moins bonne (risque de moisissures). Pour la lacto-fermentation, les bactéries viennent des légumes, de nos mains, etc. Il n’y a pas besoin d’ensemencer. Lacto-fermentation ne signifie pas non plus que le produit final contient du lactose. Au contraire les produits lacto-fermentés peuvent être consommés par les intolérants au lait car ils ne contiennent que de l’acide lactique, pas de protéines allergisantes du lait.</span></div>
